Sugar Free Paleo Avocado Popsicles

Avocado ice pops in the Philippines is the cure for the heat. That and a mango shake.

They tasted deliciously sweet and would come in these thin, plastic bags. They were mostly made out of avocado and sweetened condensed milk and some water or coconut milk. Nothing else. If you are most folks, you'll probably be wondering what in the world that tastes like. Isn't avocado a vegetable? Doesn't it belong in guac or on top of a salad? For me, growing up in the Philippines, avocados were dessert. The most typical way to eat them was to cut them in half and sprinkle a bit of sugar on top and eat it as-is with a large spoon. It was a quick and easy snack. Fast forward a few years later, in America, avocados or specifically avocados from Mexico are famous as guacamole or side. It's gotten a lot of positive wrap lately as a good fat so eating in moderation is recommended.

I thought I would try to recreate those avocado ice pops, but remove the sweetened condensed milk altogether. As a substitute, I use a very ripe banana instead as a sweetener. What you'll get is a slightly sweet refreshing ice candy pop. For those used to eating a lot of sugar, this may be bland to you, but as your taste buds change and your brain relies less on sugar, these taste delicious.

I used a popsicle mold I found on Amazon a few years back and recommend getting because they make it easy to mix up any kind of popsicle flavors. I originally purchased these and they've held up. Summer is a great time to experiment with fruit flavors. The best part is that you control the ingredients and it's so easy, children can help. This is a great paleo dessert with plenty of good fats.

 
 

Ingredients

  • 1 ripe avocado (the skin should give slightly when pushed)
  • 1 very ripe banana (the riper it is, the sweeter)
  • 1 tbsp of lime (to keep it from browning)
  • 1/2 cup of coconut milk
  • 1 cup of water
 

Directions

  1. Add avocado to a blender.
  2. Pour lime juice and mix slightly with spoon. (Don't blend yet.)
  3. Add banana, coconut milk and water.
  4. Blend until it's completely pureed.
  5. Pour into the molds. This yielded about 5 1/2 popsicles.
  6. Freeze for at least 6 hours.
  7. Remove from the mold by placing popsicles in a cup of warm water.
  8. Gently remove from mold.
